ALLIGATOR (SMOKED)


Brine

3/4 cup kosher salt

8 cups water

3/4 cups soy sauce

1/2 cup sugar

1/2 cup brown sugar

4 tablespoons black pepper

2 tablespoons garlic powder

1-1 1/2 tablespoons lemon pepper


Whole Alligator

Bacon

Brine alligator for 8 hours, turning over halfway through. Wrap in bacon. Place on smoker, 250 degrees for 2 hours or until thickest part of the tail reads 180 degrees.
